Tips
Traditionally, osso buco is served with Milanese risotto, but it can also be accompanied by polenta or fresh pasta.
For added richness, you can add a little butter to the sauce just before serving.
- 4 slices pork shank (osso bucco) (approx. 300 g each), with bone in center
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 2 carrots, finely diced
- 2 stalks celery, finely diced
- 3 garlic cloves, minced
- 1 cup of dry white wine
- 398 mL crushed tomatoes (canned or fresh)
- 1 bouquet garni (1 sprig fresh thyme, 1 bay leaf, 4 to 6 sprigs parsley )
- 1 cup chicken or vegetable stock
- Salt and freshly ground black pepper
- 1 tablespoon butter (for cooking vegetables)
- 1 tablespoon flour (to coat the meat)
Pour la gremolata (accompagnement de l'osso buco) :
- Zest of one lemon
- 2 tablespoons chopped fresh parsley
- 1 clove of garlic, finely chopped
