- 24 medium shrimp (31/40), raw and peeled
- 350 g (about 3/4 lb) halloumi, diced
- 8 cherry tomatoes
- 8 white mushrooms
- 8 baby potatoes, cooked
- 2 small zucchini, cut into thick rounds
- 2 ears of corn, cut into small rounds
For the marinade:
- 80 mL (1/3 cup) basil pesto
- 60 mL (1/4 cup) olive oil
- 3 scallions, chopped
- 1 lemon (zest and juice)
- Salt and pepper to taste
