Chicken lollipops with BBQ sauce

Tender, juicy chicken drumsticks coated in a delectable BBQ sauce: enjoy this explosion of flavours to delight your taste buds and those of your guests!
- 12 chicken drumsticks with skin
- 125 ml (1/2 tasse) ketchup
- 125 ml (1/2 tasse) brown sugar
- 60 mL (1/4 cup) chili sauce
- 60 mL (1/4 cup) cider vinegar
- 5 mL (1 teaspoon) chipotle powder
- Salt and pepper to taste
- Preheat the BBQ on medium high (about 220 °C – 425 °F).
- Using a knife, make an incision around the drumstick bone about halfway down the bone, strip the bone by removing the skin and flesh above the incision, then push the remaining skin and flesh towards the meaty part. Season to taste with salt and pepper.
- Turn the heat off on one side of the BBQ and oil the grill grate, and place the drumsticks on the side where the burners are off. are off.
- Close the lid and cook the drumsticks for 30-35 minutes, turning a few times during cooking.
- While the drumsticks are cooking, prepare the sauce by combining the ketchup, brown sugar, chili sauce, cider vinegar and chipotle powder in a saucepan.
- Bring the sauce to the boil, then simmer over low heat for 10 to 12 minutes, until syrupy.
- Brush the drumsticks with the sauce, close the BBQ lid and continue cooking for 12 to 15 minutes, brushing a few times during cooking.
