Ingredients Preparation

300 g fresh linguine pasta
400 g peeled shrimp (fresh or frozen)
4 à 5 garlic cloves, minced
2 tablespoons olive oil
1 tablespoon butter
1 small red pepper (optional, for a little heat)
1/2 glass dry white wine (optional, but recommended)
juice of half a lemon
Chopped fresh parsley (approx. 2 tablespoons)
Salt and freshly ground black pepper
Lemon zest (optional, for a touch of freshness)
Grated Parmesan cheese (optional)

Cooking the pasta :
Cook pasta in a large pot of boiling salted water, according to package directions, until al dente. Drain, reserving one cup of cooking water.
Prepare the shrimps :
If you're using frozen shrimps, be sure to thaw them thoroughly and dry them with paper towels.
Brown garlic and chili pepper :
Heat the olive oil and butter in a large frying pan over medium heat. Add the minced garlic and cook for 1-2 minutes, until golden. If you like a little spiciness, add the minced chili pepper at this point.
Cook the shrimps :
Add the shrimps to the pan and sauté for 3-4 minutes, until pink and lightly browned. If using white wine, pour it in at this point and reduce by half for 1-2 minutes.
Mix with pasta:
Add the lemon juice to the pan, followed by the drained pasta. Mix well to coat the pasta with the garlic and shrimp sauce. If the sauce is too thick, add a little of the reserved pasta cooking water to loosen it.
Season and serve :
Add salt and pepper to taste. Add chopped fresh parsley and, if you like, a little lemon zest for a fresher taste. Mix well.
Presentation and serving :
Serve immediately on warm plates. You can add a little grated Parmesan cheese on top, if you like.
