cod accras, aioli, pineapple
Fall under the (gustatory) spell of accras, those little fried cod fritters that will take your taste buds straight to the Caribbean sun. As if that weren't exotic enough, we've added a delicious garlic sauce and a sweet pineapple salsa: an original and strangely satisfying mix!
Accras:
- 500 g cod fillet or other white fish
- 500 ml 3.25% milk
- 1 yellow potato, peeled and blanched
- 1/2 cup chopped parsley
- 1/2 cup green onions, chopped
- 1/2 cup coriander
- Zest and juice of 3 limes
- 1/2 cup flour
- 7.5 ml (1/2 tablespoon) baking powder
- 1/2 cup club soda
- 1 habanero pepper, diced
- Salt
- Pepper
- Oil for frying
Aïoli:
- 1 cup pineapple
- Juice and zest of 1 lemon
- 2 cloves garlic, microplane grated
- 15 ml sweet paprika
Pineapple:
- 1/2 pineapple
- 1/2 cup green onions, chopped
- 1/2 cup coriander, chopped
- Juice of 4 limes
- 1/2 cup olive oil
- Salt
- Green Tabasco to taste
