- 1 454 g block of firm tofu, cubed
- 1 zucchini, sliced into rounds
- 1 small red onion, quartered
- 4 naan breads
- 250 ml (1 cup) 2% plain Greek yogurt
- 15 ml (1 tablespoon) chopped ginger
- 15 ml (1 tablespoon) chopped garlic
- 15 ml (1 tablespoon) fresh lemon juice
- 15 ml (1 tablespoon) paprika
- 5 ml (1 teaspoon) ground coriander
For the marinade :
- 250 ml (1 cup) 2% plain Greek yogurt
- 30 ml (2 tablespoons) chopped fresh mint
- 10 ml (2 teaspoons) chopped garlic
- 1 Lebanese cucumber, seeded and finely diced
