Mozzarella tomatoes
Slice some fresh tomatoes and spread the slices out on a large plate. Slice some fresh mozzarella and add it on top of the tomatoes. Drizzle some olive oil and balsamic vinegar on top. Season with salt and pepper. Add a few basil leaves and you’ll be able to serve a fresh appetizer you can enjoy any time of the year!
Tomato pie
Pre-heat the oven to 375 °F. Line a greased pie dish with puff pastry. Cover with a thin layer of pesto or a combination of Dijon mustard and olive oil. Sprinkle some shredded Emmental cheese on top. Thinly slice red tomatoes and place each slice in the pie dish. Drizzle some olive oil on top and season with salt and pepper. Bake in the oven for 35 to 40 minutes or until it is baked to your liking. Add fresh herbs on the pie once out of the even and you’re guaranteed to dazzle your guests!
Caprese sandwich
Slice a ciabatta roll lengthwise and spread a bit of olive oil and balsamic vinegar on each half. Then top with fresh basil and slices of fresh tomato and mozzarella. For even more flavour, add some pesto.
Quick bruschetta
Pre-heat the oven to 350 °F. Drizzle some olive oil on thin slices of baguette then bake until the bread is slightly golden. In a bowl, combine small cubes of freshly cut tomatoes, shallots, minced garlic, basil, as well as salt and pepper. Use a spoon to spread this mixture on top of the slices of bread. Add a bit of chopped parsley and parmesan then drizzle some balsamic vinegar on top.
