Butternut squash tacos
This vegetarian meal is simple to make and will please the whole family. Start by peeling the squash and removing its seeds. Then cut it into small cubes. In a bowl, combine the cubes with the taco seasoning. Spread the cubes out onto a baking sheet and bake in the oven at 350° for about 25 minutes until golden and soft. To quickly heat your tortillas, simple wrap them in some aluminum foil and bake in the oven at 350° for about 8 to 10 minutes. Then place a small scoop of the seasoned squash onto each tortilla and add the toppings of your choice such as avocado, spicy mayonnaise, cilantro, cheese, etc.
Bonus: for a quick and delicious spicy mayo, simply combine some mayonnaise with a bit of sriracha hot sauce and lime juice. The more sriracha you add, the spicier it will be!
