Before you begin, you’ll need the following equipment to safely can foods:

  • A large, deep pot
  • A canning rack
  • Canning tongs

Once you have the right equipment, you’ll simply need to pick the foods you want to can. Make sure you carefully follow the sterilization steps, which depend on the pH value of the foods you want to can. Because this is an incredibly important step to prevent food poisoning, you should make sure you have all the right information before you start.

  • 2 cups of vinegar
  • 2/3 cups of coarse salt
  • Many small cucumbers
  • About 8 sprigs of fresh dill
  • 4 garlic cloves
  • 1 ½ cup of water

Once you sterilize your jars, add half a clove of garlic, a sprig of dill, and cucumbers in each one. Bring the water, salt, and vinegar to a boil in a large pot. Pour the liquid into each jar and seal according to the sterilization instructions. Leave the jars in a refrigerated location for about two weeks and then enjoy!

Fruit ketchup is a pantry staple in many homes in Quebec. You’ll need:

  • Many red tomatoes (about 2 kg)
  • 5 apples
  • 5 pears
  • 7 peaches
  • 3 onions
  • 1 green bell pepper
  • 1 cup of brown sugar
  • 2 cups of vinegar
  • A few tablespoons of pickling spices

Blanch the tomatoes by plunging them into boiling water for 1 or 2 minutes. Then peel and dice the fruits and vegetables (including the tomatoes). In a large pot, heat the vinegar, brown sugar, and salt. Then add the spices, fruits, and vegetables. Simmer for about 90 minutes by stirring occasionally. Then sterilize the jars using your preferred method. Once that’s done, pour the ketchup into the jars and keep them in a dry, cool, dark location. Enjoy with your holiday meatloaf or your Thanksgiving turkey!

  • A few kilograms of peeled, cored apples
  • Store-bought lemon juice
  • White or brown sugar

After safely sterilizing your jars, boil your apples in a large pot to soften them a bit. Then pulse the apples in a blender until you get the texture of compote. Add sugar to taste and a bit of lemon juice. You can also add some kick to your compote with ginger or cinnamon. Pour the compote into your jars and follow the steps for sterilization. Easy peasy!
