Grab a Mason jar or a plastic container if you're making lunch for a child and add a layer of lettuce in the bottom. Then add the tomatoes, onions, and bacon. You can also add any other vegetables you've got in your fridge such as shredded carrots, cucumbers, red, orange, or yellow bell peppers, etc. The more colourful and brighter it is, the tastier it will be! To avoid soggy lettuce, bring your vinaigrette in a separate container and only pour it onto your salad when you're ready to eat.
Suggestion for homemade vinaigrette: for a quick and easy vinaigrette, combine some balsamic vinegar, olive oil, Dijon mustard, and maple syrup. Adjust the quantities to your liking!
Pita pizza to go
Save time in the morning by preparing these pizzas the night before. Spread the tomato sauce onto the pita bread. Then add your favourite sliced veggies, sliced salami, and shredded cheese. Bake in the oven at 400 degrees until the cheese is melted and slightly golden. Once the pizzas are ready, let them cool for a few minutes before slicing in four and storing in the fridge. The next morning just put them in a reusable container in your lunch box and you're ready to go!
