In a pan, brown some butter, garlic, shallots, and spinach but don't cook them completely. Add the liquid of your choice, such as cream or wine, to enhance the taste to your liking. Once you've shucked the oysters, add the spinach mixture on top of each one. Top with breadcrumbs and parmesan. Broil in the oven for about 10 minutes or until the oysters are golden brown.
